optimal starting stats.. fairly complex question really. we have to consider, end game plan, and early game plan. And we should consider which stats can be leveled easy versus those that are not. Attribute points are the main concern, focus points tend to be easy to come by.
Talking about those Valor, Generosity, Honor, Calculating, etc. Main character tend to get one for free based on the choices you pick at the start. I also knows for sure that the personalities affect persuasion chance and the option you can chose when persuading lords. What I'm specifically threading on is how you gain or lose it.
While the character creator Mount and Blade II lets you make a serviceable noble that doesn't look like a sack of potatoes (or a potato), it's still far from the usual contemporary standard we enjoy in most RPGs these days. The options are rather limited or bland. Detailed Character Creation lets you surpass that shortcoming.
At level 29 you have: 18 baseline attribute points from character creation. 7 spendable attribute points from leveling. 1 attribute point in either Vigor or Control (from Smithing). 12 baseline focus points from character creation. 29 spendable focus points from leveling. 1 focus point in One Handed (from Smithing).

First, it makes you a larger or smaller target. Second, it changes how your aiming reticle works and you have to adjust for your character each play-through. Coverage of your shield is also affected by height/size. Having made a max and minimum height character; I find the smaller character easier to play with.
